Good and Bad Daddies

I used to wonder what my life would have been like if my own father would have been more willing to be a beacon in it.  As I have gotten a little older, I realize that I've had just what i needed along the way;  a father who abandoned me, another who abused me, one more who didn't really welcome me as part of his family, only as a friend, one who welcomed, supported and loved me and a few others who were willing to give me a little nugget of wisdom and love along the way.  Because of those men who extended a hand, gave me a piece of their hearts and even those who hurt me, I am a blessed woman.   The combination of love and heartache provided me with a rich group of experiences that have allowed me to love, appreciate and endure  trials with my own husband.  It's taught me how important Xavier's role is in the scheme of things with our daughters.  I am incredibly thankful for all of these things.


So, today, I thank you!  Happy Father's Day to all of you ... Good and Bad Daddies.  Your role was very important in making me a super strong, compassionate woman.

Homemade Buttermilk Biscuit Recipe




Ingredients:
2c sifted flour
1tbs Baking Powder
1/2tsp salt
4tbs sugar (more or less if you like)
8tbs (1 stick) of cold butter
3/4c of buttermilk (you can sub cream or half and half)

Instructions:
1) Preheat oven to 400 degrees.
2) Mix all dry ingredients together.
3) Cut the stick of butter into pieces and work into the flour mixture with your hands until you have little pea sized lumps in the flour.
4) Add the liquid, mixing until slightly loose and sticky.  (you can add a tiny bit more liquid if need-be).
5) Put your dough onto a floured surface and knead for a minute.  The dough should be smooth and no longer sticky.  You can sprinkle more flour if you find it still sticking but be careful not to add too much flour because it will make your biscuits "heavy".
6) Form the dough into a ball and hit it a couple times with your hands or rolling pin.  Turn it and fold it a few times between whacks.  (i'm sorry, i have no better way of saying this ... *giggles*)
7) Roll dough out until it is about 1/4th of an inch thick
8) Cut your dough using a round biscuit cutter (glass or a cup will do if you don't have one)
9) Place your biscuits on a greased baking sheet close together so they'll rise nicely.
10) Bake for 15 minutes or until they are golden brown

This recipe makes about 10 to 13 biscuits for me.

Collecting Rain

From the depths of all I hold dear
I mustered up the stregnth to say it.
To have your ear this final time
Only to hear me cry in it.

It was never that I didn't love you
In fact it's quite the opposite.
It was that I love them too
So I have to leave it.

It kills me to have to let it go.
Not having you to hold.
What we built many years ago
can only bring us heaviness and trouble.

The disgust of sharing
the hurt of caring too much
is all too real for me ...
All I craved was your touch.

I couldn't control my heart.
Putting it in a leash was too hard.
So today, I cry for what we aren't.
Mourning all over again for what's torn apart.

Taking it back is what I'd love to do.
But collecting rain in a broken pot is simply impossible.
